Cookies

We've been doing a lot of baking lately and trying to work out some gluten free items like pies and sugar cookies that I haven't had any success with in the past. The last two days we made two different kinds of gingerbread cookies. Adia insisted on smelling and trying each ingredient as I put it in. She'd say it was nasty and when everything was all mixed, she tried it dough and said, "That's actually good, Mommy." She's a fan of gingerbread.




Yesterday we also got a big surprise in the mail. My friend sent us a package that included some onesies for the twins and a hot pink tutu for Adia. She was so excited. Her eyes lit up when I pulled it out of the box. She immediately wanted to wear it and began dancing around the living room. We went to the mall later and she refused to take it off.




Adia spent the night with DiDi last night. I think it was the first time in years that I had the bed completely to myself. Even better, the twins slept 10-6!




Today Adia and I made sugar cookies. I had to totally change the recipe to get the taste and texture right. I was shocked when it ended up turning out exactly like I wanted. It's normally really hard to roll out gluten free doughs, but this was the perfect consistency. Adia flaked out before we got to the cookie cutting part (mostly because I had to keep changing things) so I ended up rolling and cutting them all myself. After baking, we let them cool and then I had to convince her to help me frost them. She's never done anything like that before so she didn't know what I was asking. We ended up with purple and green pumpkins because those were the only colors of food coloring I had. Adia had a blast frosting them, but I think she ate more frosting than she used.
